Easy Coffee Cake Recipe

What better to do on a rainy Sunday than bake! I love baking, and what better to bake than a nice creamy coffee cake. I got the recipe from BBC good food (where I get most new recipes) and it turned out great, so I thought I would share. The sponge is lovely and not too dry, especially teamed up with the creamy icing.

Cake Ingredients
150g caster sugar
150g butter or margarine
3 eggs
150g self raising flour
1 1/2 tsp baking powder
1 tbsp hot water
1 1/2 tbsp instant coffee (add more if you like it strong)

Icing Ingredients
225g icing sugar
100g butter or margarine
1 1/2 tbsp instant coffee
1 tbsp hot water

  1. Preheat the oven at 160C and grease a round cake tin.

  2. Add the sugar and the butter to a bowl and whisk/mix until very fluffy and a pale cream.

  3. Wisk the eggs in a mug with a fork and then add them gradually to the mixture with 1 tbsp of flour each time. Make sure you don't use all the flour.

  4. Add the rest of the flour and the baking powder to the mixture and fold it in gently.

  5. Dissolve the coffee in the boiling water and add to the mixture still folding.

  6. Cook for 30 minutes before checking with a skewer. Mine came out with wet mixture on it so I put the cake back in for 10 more minutes at a slightly higher heat.

  7. When the cake is out of the oven cooling, cream the butter and the icing sugar with a mixer until light and fluffy.

  8. Dissolve the coffee in boiling water and slowly add to the icing mixture, be careful not to make the icing too runny, add a little more icing sugar if you need to. Leave in the fridge until the cake is no longer warm.

  9. Once your cake is cool, ice your cake using a flat knife and decorate. I cut a heart shape into the middle of a piece of paper and sprinkled cocoa through it to get this pretty result.

  10. Indulge in a big slice with a cup of tea or coffee!
